Salted Chocolate Espresso Shortbread
We love using products from other makers in our cookies so we've teamed up with our friends at Hatteras Saltworks -- so from now through March we are offering our new favorite cookie.
As with many things in our kitchen we start with butter then add a little espresso powder. We end with chopped chocolate and their course salt. Adding the salt at the very end means it does not dissolve into the dough resulting in small bursts of salty flavor with each cookie. A little salt, a little chocolate and a lot of yummm!
Hatteras Saltworks uses solar ovens constructed mostly of found materials to evaporate the water they harvest from the Atlantic Ocean.
